Fancy Cupcakes...

Sorry it's been so long but i'm back with exciting new recipes for you this summer.

These cupcakes are so delicious and easy to make, they really are! The icing can be made in loads of different flavours and colours. These cupcakes are vanilla cupcakes with vanilla buttercream on top. All ages can make these simple treats that are made in under half an hour.

If you can try and buy vanilla pods, they are expensive but sometimes they are in Lidl so you could try there. The pods really make a difference to the taste. These really are SO handy to bring to a party, Bbq or just to eat yourself at home, i hope you enjoy them as much as i do!

Ingredients - makes 12 cupcakes

175g Butter - Softened

115g Caster Sugar

3 eggs

225g Self Raising Flour

1 cap of vanilla essence

Buttercream Icing

140g Butter - Softened

300g Icing Sugar

2 Tablespoons of milk

1 cap of vanilla essence

1 vanilla pod scaped out

food colouring 1 cap at a time and increase if needs be

Method - cupcakes

1. Preheat the oven to 160c

2. beat the butter and sugar for 10 minutes in a mixer until pale and fluffy

3. add in the vanilla and mix in the eggs one at a time with a spoon of flour

4. add in the rest of the flour and mix until combined

5. fill mixture half way up each bun case

6. bake in the oven for 15-20 mins until golden brown

7. leave to cool and ice.

Once they are completely cool ice the cupcakes

Method - icing

1. beat the butter for 10 mins until pale and fluffy

2. add in the vanilla pod and essence

3. add half the icing sugar and mix until combined

4. add in remaining sugar and add in the milk

5. place into a piping bag or simply spread with a knife

6. add spinkles

7. EAT
